Tex Mex or Southwestern Side Dish Recipes

OK all you Cooks and Connoisseurs --
I'm throwing a birthday party for my Mom next month -- and since she requested that we make margaritas, the meal has turned in to a sort of Tex-Mex themed BBQ. I'm planning to make Southwestern Beef Skewers and Cilantro-Lime Shrimp Skewers for the main dish, and I'll make corn bread to go along with it.
NOW I'm trying to come up with some Mexican or Southwestern style side dishes. I want something more exciting than your typical Spanish Rice and Refried Beans. It could be veggies, salads, or even potatoes.
Any suggestions?

By far the easiest way to make margaritas and they taste great too!
They are good, agreed, but no match to the fun factor of making 40 gallons of margaritas with a garbage disposal. :) ;)
True, but less dangerous after you've already had a few! :W

Okay, I couldn't resist one more! This one is richer, while the Tea Bread is lighter. Both are excellent. I love blueberries and I just discovered that my 2 year old grandson does too. :W ENJOY!
Quick Blueberry Pound Cake
1 package yellow cake mix
1/4 cup white sugar
3 eggs
1 (8 oz.) package cream cheese, room temperature
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 1/4 cups blueberries
Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan.
In a large bowl, stir together cake mix and sugar. Make a well in the center and pour in eggs, cream cheese, oil and vanilla. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Stir in blueberries. Pour batter into prepared pan.
Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Here's a GOOD one that I've made a few times. Coincidentally, my co-workers were just mentioning the other day that I hadn't made it in a while (hint! hint!)
Blueberry Tea Bread
2 cups all-purpose flour
1 cup sugar
4 teaspoons baking powder
1/4 teaspoon salt
1-1/2 cups fresh blueberries
2 eggs
1 cup milk
3 tablespoons canola oil
1 teaspoon grated orange zest
confectioners' sugar
Preheat oven to 350°F, and lightly grease a 9x5-inch loaf pan.
In a large bowl, combine the flour, sugar, baking powder and salt. Stir in the blueberries.
In a small bowl, beat together the eggs, milk, oil and orange zest. Add all at once to the flour mixture, stirring just until dry ingredients are moistened. Turn into greased loaf pan.
Bake at 350°F for one hour or until cake tester inserted in center comes out clean. Remove from oven and cool 10 minutes on rack, then remove from pan and cool completely. Sprinkle top with confectioners' sugar before slicing.
**I have also made this in a bundt pan and it comes out just as yummy!**

Oh, my! These recipes all sound sooooooo good, I'm gonna try this one next!

Me too.This is my husband's favorite type of coleslaw so it's the one I make most often (it's also very easy as you see, especially with pre-packaged cole slaw!)

Here are two of my faves!

3 tablespoons creamy peanut butter
2 cloves garlic, minced
1/2 teaspoon salt
2 tablespoons rice vinegar
2 tablespoons soy sauce
1/8 teaspoon hot pepper sauce (e.g. Tabasco™)
1/2 cup chopped cilantro leaves
2 tablespoons chopped fresh chives
2 red bell peppers, thinly sliced
8 cups shredded cabbage
2 tablespoons toasted sesame seeds (optional)
Stir together peanut butter, garlic, salt, rice vinegar, soy sauce, and hot pepper sauce until smooth. Fold in cilantro, chives, and red pepper. Add shredded cabbage, and toss until well coated. Scoop into a serving bowl, cover with plastic wrap, and refrigerate 1 hour. Sprinkle with sesame seeds before serving.

RE: Beating a dead horse - pictures in signature and posts

Before the current guidelines on pictures, members could post any size picture in their signatures.
And I can't thank you guys ENOUGH for putting a stop to that. What a PAIN it was to try and scroll through a thread when people had those huge giant signature pics. I hope you NEVER go back to that. I have DSL and I still hated those giant sig pics!

I LOVE that spinach dip recipe. I make it every Thanksgiving as an appetizer to take to my Mom's place. If I try and make something different everyone pouts, so even if I try something new I have to bring the spinach dip too! YUM!

How far a drive were you thinking...right in your neighborhood or a couple of hours drive? Fort Flagler State Park (by Port Townsend) or Dosewallips State Park (by Brinnon) would be nice first time outings...have you visited the State Parks website? It's a great site -- LOTS of information, photos, campsite maps, etc. Wherever you go, I hope you have fun!

I met someone who turned out to be a very good friend when I went to my apartment laundry room to find her taking MY clothes out of the dryer. I'm sorry you had such a terrible experience but you didn't do a darned thing wrong, so don't beat yourself up for a single second!
I'm with Burro! If you'd folded MY clothes, not only would I have apologized all over the place and thanked you profusely, I'd have bought you ice cream!
Oh, and Burro -- I don't think that's an "unspoken rule" -- I think it's posted in almost every laundry mat I've ever been in.

I usually just tell them to go back to their OWN campsite! LOL! (someone had to do it!)
Seriously, we mainly only have problems with mosquitoes, and those we keep at bay with a combination of bug candles around the campsite and repellent. If it's really bad we'll bring a can of "Yard Guard" and actually spray the perimeter of our campsite, the bushes and things. It works WONDERFULLY.

Meaty Italian Pasta Sauce
1 pound sweet Italian sausage, sliced
3/4 pound lean ground beef
1 medium sized onion, chopped
3 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
1 (15 ounce) cans tomato sauce
1/2 cup water
2 tablespoons white sugar
2 teaspoons dried basil
2 teaspoons Italian seasoning
1/2 teaspoon fennel seed
1/2 teaspoon salt
1/4 teaspoon ground black pepper
In a large pot or Dutch oven over medium heat, cook the sausage, beef, onion, and garlic until well browned; drain fat. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Mix in sugar and season with basil, fennel seed, Italian seasoning, salt, and pepper. Reduce heat to low, cover, and simmer 1 1/2 hours, stirring occasionally.

**Note: This recipe is written "as is" and makes a great base sauce to add other veggies and spices to. I like to add sliced mushrooms, olives, and chopped bell pepper when I brown the meat and onions. (Sometimes I add sliced zucchini too!) Then, I transfer the meat/vegetable mixture to my slow cooker, stir in the rest of the ingredients -- and let it simmer for several hours.
Serve over your favorite kind of cooked pasta with some freshly grated romano cheese sprinkled on top. Of course, a side of garlic bread is a must -- YUM!

Just the U.S. FDA, the Food Safety Commission, every disease control poster I've ever seen in the kitchen area of restaurants, etc...think I'll stick with the hot water.

Use cold (cool) water for washing dishes, faces, etc. it works fine. I respectfully disagree. Having been raised by a nurse I know more about germs and bacteria than I care to admit, and one thing I would NOT do is wash my dishes in cold water. If you DO wash your dishes in cold water I highly recommend a boiling water rinse or "dip" to sanitize them afterwards. Could save you from getting sick later. Easy enough to heat water while you have the campfire going...
